Thai Coconut Udon with Caramelized Beef & Soft-Boiled Egg

@m_arinesg · Thai

This video provides a detailed recipe for Thai coconut udon with caramelized beef and a soft-boiled egg, including ingredients and step-by-step cooking instructions.

Ingredients

  • 2 portions Udon
  • 2 eggs
  • 250g beef
  • 40cl coconut milk
  • Small vegetables of choice (carrots/cabbage)
  • Piece of ginger
  • Piece of lemongrass
  • 2 cloves garlic
  • 6 tbsp sweet soy sauce
  • 2 tsp concentrated tomato paste
  • 1 tbsp peanut butter
  • Sesame oil
  • Neutral oil
  • A little water to thin coconut milk
  • Lime juice
  • Coriander

Steps

  1. 1.In a bowl, add beef, soy sauce, and breadcrumbs, then mix well.
  2. 2.In a sauté pan, heat neutral oil and sesame oil. Add finely minced garlic, ginger, and lemongrass, then sear the beef. Let it caramelize well. If it sticks slightly to the bottom, it's fine: it will add even more flavor! Set the beef aside.
  3. 3.In the same sauté pan, pour a little water to deglaze, then sauté the small vegetables cut into julienne for a few minutes. Set them aside.
  4. 4.Still in the same sauté pan, add a little neutral oil and sesame oil again, then minced garlic, ginger, and lemongrass. Incorporate the tomato paste and lime juice, then sauté for 1 to 2 minutes.
  5. 5.Pour in the coconut milk, peanut butter, a little water, then mix. Let it simmer, then add the udon. Cover and cook for about 5 minutes.
  6. 6.In parallel, plunge an egg into a pot of simmering water and let it cook for 6 minutes. Immediately cool it in cold water, then carefully peel it.
  7. 7.Serve the udon in a deep plate with the caramelized beef, small vegetables, and soft-boiled egg. Finish with a little breadcrumbs, fresh coriander, a drizzle of lime juice, and a few drops of chili oil.
